Stovetop Cinnamon Apples with Cranberries and Walnuts

I made this last night, with the intention of eating it for my lunch today.

Honestly, I’m surprised it’s lasted that long.

These cinnamony apples taste like the filling of your favorite apple pie, without all the added sugar or the fatty crust.

They taste great for breakfast, dessert or just a healthy snack when your body is crying out for something sinful.

And the whole thing only takes about 15mins, and one pot to make.

Stovetop Cinnamon Apples with Cranberries and Walnuts - Serves 1, doubles easily.

Prep time: 5mins  Cook time: 10mins

  • Two granny smith apples
  • 1/4 cup apple juice
  • 1 tbs soft brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla essence
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts

Peel, core and thinly slice the apples, and place them in a pot. Pour over the apple juice, dump in the brown sugar and simmer over a medium heat for about 10 mins.

Once the sugar has completely dissolved, and the apples are tender and have soaked up most of the liquid, reduce the heat to low and gently stir in the cinnamon and vanilla. This should get rid of that last little bit of liquid.

Remove from the heat, and stir in the cranberries and walnuts.

Serve immediately, or stick in the fridge for later.

It’d taste lovely with some vanilla ice cream.

 

(Note: if you’re using more than two apples, allow the cook time to be a wee bit longer.)
